Happy Hump Day y’all! I hope everyone’s week has been off to a fabulous start. I know mine has.
Over the weekend, I made my grocery list so that I could go shopping. I am a complete weirdo and thoroughly enjoy making grocery lists every two weeks.It’s a sick pleasure that makes me feel whole.
I like to start by looking at Pinterest and find new recipes. I am one of those that has to follow a recipe step by step when I’m making something the first few times. Eventually, I can do it off of memory and then I can free-hand it.
This particular recipe, Chicken Tikka Masala was a pure gem! Let me tell you, if you would have asked me two years ago if I would eat Indian food, I would have given you a stank face. I thought curry smelled awful and that you had to eat with your hands, and I not about that life. But when I went to Mexico and tried their Indian restaurant, much to my resistance, I LOVED IT! I loved all the spices, flavors, and textures. One of my favorites was of course Chicken Tikka Masala. I’m sure that is the most basic meal you can get, but it’s delicious. So you can imagine my excitement when I found this recipe. I decided to give it a shot. I mean why not?
Let me tell you, who crafted this recipe deserves a pat on the back. It is so delicious and is as close to authentic as you can get. It serves about 4-6 people, meaning enough to feed me for two days. I’m not kidding- I made this on Sunday night and I just polished off the rest today. It is beyond amazing!
