Burrata and Peach Arugula Salad

This has become one of my all time favorite salads. I came across this idea through Food & Wine magazine. It’s the perfect summer time salad for parties or even a picnic. 

imageBecause I’m gluttonous and can’t control myself, the last time I made the salad, I sat at the kitchen counter and at the WHOLE salad by myself. Did I feel sick while eating it? Of course I did. But I wasn’t going to let it just sit there and taunt me. So I ate it all, then cried myself to sleep. Kidding 🙂

Recipe:

  • (1) Package of prosciutto
  • (1) Large burrata cheese ball (purchased from Mariano’s)
  • (4) Cups of fresh arugula
  • (2) Peaches
  • Balsamic glaze (purchased from Trader Joe’s

Instructions:

  1. Spread the arugula evenly on a serving platter
  2. Take the peaches, cut in half, remove the seed, and slice the peaches. Spread the peaches evenly on top of the arugula
  3. Open the package of the prosciutto. Tear into tiny pieces and spread throughout the salad
  4. Take the burrata and place in the middle of the salad. Cut in half so that the insides start to ooze. Cut up the arugula into small pieces and spread on the salad
  5. Open your balsamic glaze and lightly drizzle over the salad
  6. Enjoy!
