Today is my favorite kind of day. 1). It’s Friday. 2). It’s payday. 3). It’s the start of a holiday weekend! My boyfriend came back last night from his weekly trips to Cali. I had the day off, so we went for a long walk and stopped by Mariano’s for grocery shopping. I’m obsessed with grocery shopping. I could literally spend hours there, picking out meats, cheese, and fresh vegetables. It’s a problem how long I take grocery shopping, just because I want everything. So I try to go every two weeks, with a list that I make on Wednesdays, and so that I can stay within my budget.
We walk into the store and make our way to the meat/seafood section and see that they have live lobsters as a holiday special. Andy spent about 10 minutes trying to convince me that buying a live lobster is a good idea. First off, I don’t even know what to do with a whole lobster. I don’t like that it can see me and that it moves around and are just weird looking. Secondly, I wouldn’t even know how to make it. Third, I don’t want to hear it scream when it hits the hot scolding water. No thanks!
we settled for lobster tails instead since they were on sale. I grabbed a few more items that I plan on making for the upcoming week.
This is first weekend that we’re at home and can finally do whatever we want. Let me tell you, after the week I’ve had, I need to plop my butt on a sofa and just sit for hours binging on Netflix. But of course, that won’t be happening. Haven’t you ever just wanted to do nothing? The older I’ve gotten the more busy I’ve become. I don’t really like it. I like having “me” time. I like taking naps. I like watching hours of junk TV. I like drinking a bottle of wine while making dinner. But it just doesn’t seem to be in my deck of cards. Alright, pity party is over.
For lunch, I made us the lobster tails and a Greek salad. This was nice quick and dirty meal I could make and enjoy the last summer on our patio while I could.
2 lobster tails
1/4 tsp minced garlic
Pinch of seasoning ( I used Habanero Garlic Pepper)
4 cups of mixed greens
1/2 cup kalamative olives
1/2 cup cherry tomatoes
1/2 red onion (I opted not to use any)
2 oz crumbled feta cheese
1/3 cup Greek salad dressing (I bought Ken’s Greek Salad dressing, but here is a great recipe if you want to make your own)
-Heat your grill on a medium flame
-Rinse the lobster tails on cold water. Cut the hard shell down the middle. Make sure to cut the lobster meat while doing so. Pull the meat from the shell so that rests on top of the split shell. Drizzle a little EVOO over the lobster and top with seasoning. Place on grill for about 8-10 minutes. Wait until the white fat starts to ooze out before removing from grill.
-While the lobster is on the grill. Dice up the tomatoes, onions, and olives.
-Grab a large mixing box, and add mixed greens. Toss in the tomatoes, onions, and olives. Add feta cheese. Drizzle dressing on top. Mix gently.
